Korean Inspired BBQ Ribs

This summer, we’ve got more spare time during the day, so why not some spare ribs in the evening? These sweet and spicy Korean inspired BBQ ribs are guaranteed to pull you out of your stay at home funk and wake you up from your taste bud lull. While we are home bound for the time being, we can certainly enjoy the variety of flavours we have come to discover and love through our travels. These ribs capture a bit of the deep brown sugar flavour of American BBQ with the soy sauce and chillies from traditional Korean BBQ. They are sure to please both you palate and your Seoul.

Grilling the Korean inspired ribs

Korean Inspired BBQ Ribs

You will need the following ingredients:
  • 2 tbsp of gochujang (we recommend heaping tablespoons)

  • 1 tbsp of gochugaru (optional, you can skip this if you prefer less spice)

  • 2 tbsp of honey

  • 2 tbsp of brown sugar

  • 2 tbsp of rice vinegar

  • 4 tbsp of dark soy sauce

  • 2 gloves of diced garlic

  • 2 tbsp of sake (optional)

  • Pork ribs (about 8 medium ribs, you can use a rack of ribs but you will get better coating with individual ribs)

And the following equipment:
  • Container with cover

  • Measuring spoons

  • Knife

  • Cutting board

  • Spoon for mixing

  • Grill

  • Tongs

Ok, now lets get cooking!

  • Combine ingredients for the marinade in container

  • Coat the ribs, don’t be afraid to get your hands in there

  • Cover and put the ribs in the fridge to marinate for 2-3 hours

  • Start the grill, charcoal is best for proper galbi flavour

  • Once the charcoals are ready, put the ribs on the grill

  • Try to only turn once to let the outside get properly caramelised

  • Ribs are done when the juices run clear

Although for this recipe we recommend pork ribs, we have tried it with lamb as well, with very delicious results. Whatever type you choose just remember that BBQ is about enjoying the process, both cooking and eating. Some day soon we hope to be in Seoul, sitting around the grill catching up with friends, or relaxing stateside around the BBQ with family, but until then, lets embrace the tastes and smells of those experiences with a rack of Korean inspired BBQ ribs.
