As any good hipster knows, there’s trendy and then there’s trendy, and baking banana bread has, without a doubt, become trendy. With headlines that read, “Why is everyone making banana bread?” and “Banana bread is having a moment,” as our Instagram feeds are inundated with pictures of homemade banana bread, it is clear, the tasty treat has just become far too mainstream. Although we attempted to buck the trend with our banana pancake recipe, we can’t deny, we still love a good loaf. This is why we declare June to be all about the under appreciated courgette bread. Come with us and break away from the pack with this classic courgette bread recipe.
Classic Courgette Bread
You will need the following ingredients:
2 cups of shredded courgette
3 cups of flour
2 eggs
2 cups of sugar
2/3 cups of coconut oil, melted (and bit extra for greasing pan)
1 tsp of vanilla
1/2 tsp of salt
1 tsp of baking soda
1/4 tsp of baking powder
2 tsp of ground cinnamon
1/4 tsp of ground nutmeg
Zest of 1 orange
1/2 cup chopped walnuts (optional but highly recommend)
And the following equipment:
Cutting board
Cutting knife
Vegetable grater or food processor with medium grater attachment
