Decadent Brunch Waffles That You Need To Try

Eggs royale or waffles? Who else hates having to make this choice when it comes to brunch? After all, try as we might, we cannot really have an amazing brunch every weekend. So, we asked ourselves, why do we need to choose? This is why we decided to make these must try decadent brunch waffles. Inspired by some of our favourite go to brunch dishes, these waffles are most definitely over the top and so worth it.

We all love a nice brunch out, after all who doesn’t love someone doing all the cooking and cleaning for you? But sometimes, you just want brunch without having to change out of your p.j.s or leave the comfort of your own home. These brunch waffles tick all our brunch boxes, decadent, delicious, and doesn’t make us have to choose.

Fellow hipsters be warned, these are not your everyday waffles and we would not call these healthy. However, we all need a delicious and outrageous treat now and again. So give these brunch waffles a go. 

Decadent Brunch Waffles

Decadent Brunch Waffles

You will need the following ingredients for the lapsang souchong waffles:
  • 6-8 teaspoons of lapsang souchong (preferably loose leaf)

  • 1 ½ cups of oat milk

  • 1 ¾ cups of flour

  • 1 tablespoon of baking powder

  • ½ teaspoon of salt

  • 3 eggs

  • ¾ cup of unsalted butter (can be reduced to ½ cup but will be less crispy)

You will need the following ingredients for the eggs royale:
  • 8 eggs (2 eggs per serving, this makes 4 servings)

  • Smoked salmon

  • Caviar (optional but highly recommended for an extra decadent touch. We pick ours up at Waitrose.)

  • Hollandaise sauce (you can make your own or even better grab a pre-made one. We love the options from M&S or Waitrose)

  • Fresh cracked black pepper

And the following equipment:
  • Measuring spoons

  • Measuring cups

  • Cold brew container (or lidded bottle and strainer)

  • 2 mixing bowls (1 small and 1 medium)

  • Electric or hand whisk

  • Wooden spoon

  • Rubber spatula

  • Ladle

  • Waffle maker

  • 2 sauce pans

  • Slotted spoon

Ok, now lets get cooking!

Bit of prep the day before:
  • Combine 6-8 teaspoons of loose leaf lapsang souchong with 1 ½ cups of oat milk and allow to steep overnight (about 12 hours).

Let’s make some waffles:
  • Melt ¾ cup of unsalted butter. You can reduce the amount of butter to ½ cup but this will mean a less crispy waffle.

  • Pre-heat your waffle maker

  • In the medium mixing bowl, combine 1 ¾ cups of flour, 1 tbsp of baking powder, and ½ tsp of salt

  • Slowly mix in the 1 ½ cups of tea steeped oat milk. Remember to strain out the tea leaves.

  • Stir in the melted butter

  • Separate the 3 eggs, putting the whites into the small mixing bowl and the yolks into the batter and combine.

  • Whisk the egg whites into soft peaks

  • Fold whipped egg whites into the rest of the batter

  • Ladle batter into the waffle maker and cook based on your waffle maker instructions. Ours take about 3 ½ minutes per waffle.

Time for the eggs royale:
  • Lightly heat hollandaise sauce

  • Poach eggs

  • Assemble your decadent brunch waffles, starting with lapsang souchong waffles

  • Layer some smoked salmon and the poached eggs

  • Finish with hollandaise sauce and cracked black pepper

  • Garnish generously with caviar

  • Serve with your favourite breakfast beverage and enjoy!

The best part of these super decadent brunch waffles is that they are also really easy to personalise. Swap out the salmon for bacon and the caviar with fresh chives. Make it veggie with avocado. Don’t have a waffle maker? No problem, cook them into delicious, fluffy pancakes. The great thing about brunch is it can be whatever you make of it and these over the top waffles are definitely something you should make.
