Classic Courgette Bread
As any good hipster knows, there’s trendy and then there’s trendy, and baking banana bread has, without a doubt, become trendy. With headlines that read, “Why is everyone making banana bread?” and “Banana bread is having a moment,” as our Instagram feeds are inundated with pictures of homemade banana bread, it is clear, the tasty treat has just become far too mainstream. Although we attempted to buck the trend with our banana pancake recipe, we can’t deny, we still love a good loaf. This is why we declare June to be all about the under appreciated courgette bread. Come with us and break away from the pack with this classic courgette bread recipe.
Classic Courgette Bread
You will need the following ingredients:

2 cups of shredded courgette

3 cups of flour
-
2 eggs
-
2 cups of sugar
-
2/3 cups of coconut oil, melted (and bit extra for greasing pan)

1 tsp of vanilla
-
1/2 tsp of salt
-
1 tsp of baking soda
-
1/4 tsp of baking powder
-
2 tsp of ground cinnamon
-
1/4 tsp of ground nutmeg
-
Zest of 1 orange
-
1/2 cup chopped walnuts (optional but highly recommend)
And the following equipment:

Cutting board

Cutting knife
-
Vegetable grater or food processor with medium grater attachment

Zester
-
Large mixing bowl
-
Medium mixing bowl
-
Whisk
-
Wooden spoon
-
Measuring cups
-
Measuring spoons
-
Loaf pans (this recipe will make 2 loaves)
Ok, now lets get cooking!

Preheat oven to 180c

Cut off the ends of the courgette, and if you are using a food processor, cut the courgette up to fit

Grate or shred the courgette (you need 2 cups, if you have too much you can freeze the excess for later)

To the 2 cups of grated courgette add the zest of 1 orange

Add the 2 eggs, 2 cups of sugar, 2/3 cups melted of coconut oil, and 1 tsp of vanilla to courgette mixture

In the smaller bowl, mix the 3 cups of flour, 1/2 tsp of salt, 1tsp of baking soda, 1/4 tsp of baking powder, 2 tsp of ground cinnamon, and 1/4 tsp of ground nutmeg

Mix the dry ingredients into the wet until just combined

Fold in 1/2 cup of chopped nuts

Grease loaf pans and pour batter in to about 2/3 full

Cook for 50 minutes to 1 hour, until you can prick loaf with a skewer and it comes out clean

Let cool in pan
