Pancake Day: Pandan Pancakes

Pancake Day is this week, Tuesday 5 March. If you are looking for something a little different this year, we have a great suggestion. We tested out the the Dr. Oetker Nona Pandan Pancake mix, which we picked up in Chinatown.
We love pandan, if you haven’t tried it before it is a very light, fragrant flavouring that is used in a variety of Thai and South-Asian dishes. It is delicious in cakes and baked goods. Like a more earthy, summery vanilla.
Normally we make our own pancakes from scratch, but we couldn’t ignore the draw of this fun looking mix. That being said, we had to up our pancake game even with the mix. We highly recommend playing with the standard recipe to make it your own. For these pandan pancakes we ran with the tropical theme, replacing the vegetable oil with coconut oil and the liquid called for in the recipe with coconut milk. It mixes up to a lovely pastel green colour (yes there is some food colouring in the mix). This mix cooks up into thick, fluffy, American style pancakes. To serve, we cut up some bananas, slathered on Vermont maple syrup for over the top, and accompanied them with our Maple Five-spice Sausage.
So what is our conclusion: we highly recommend this mix. If you just are not feeling up to making your own pancakes or you are looking for something different and fun this pancake day, you can’t go wrong with this tasty variation of the classic pancake mix. Try changing it up with a different type of milk or oil. Also feel free to go crazy with the toppings. When it comes to pancakes, it is all about experimentation. Nothing is wrong if you like it and it tastes good. Happy Pancake Day!
