American Style Dairy Free Chocolate Pancakes
One of our favourite go to breakfasts is a big stack of classic, fluffy, American style pancakes complete with fresh berries or tasty maple syrup. They are a childhood favourite and an absolute go to for a relaxing weekend breakfast. Now, of course, pancakes in their most basic form are great, but of course we can’t leave well enough alone. So when we make pancakes, we like to make our special chocolate variation using dark chocolate almond milk. These breakfast beauties are dairy free and sinfully delicious.
Dairy Free Chocolate Pancakes
You will need the following ingredients:

1 cup of flour

2 1/4 teaspoons of baking powder

1/2 teaspoon of baking soda

1/4 teaspoon of salt

2 teaspoons of sugar
-
1 egg
-
1 cup of chocolate almond milk
-
1 tablespoon of coconut oil
And the following equipment:

cup measures
-
set of teaspoon measures
-
mixing bowl
-
whisk
-
ladle
-
frying pan
-
spatula
You can double or triple the dry ingredients and store them in a resealable container for quick use. If you do this, just use a rounded cup of the dry mix and continue with the wet ingredients as listed.
Ok, now lets get cooking!

Melt the coconut oil in the frying pan.

Combine the dry ingredients in mixing bowl.

Slowly add chocolate almond milk to dry ingredients while whisking to prevent lumps.

Mix in melted coconut oil and the egg.

Ladle batter onto heated and greased frying pan.

Once small bubbles start to pop in the surface of the pancakes, flip them over to cook on the other side.

Continue cooking batches of pancakes, greasing pan as needed with further coconut oil.
